A dish of beef enchilada casserole with melted cheese and red sauce

Let it sit 5 minutes after baking so the layers hold when you scoop.

How to make it

  1. Heat the oven. Set it to 375 degrees.
  2. Cook the beef. In a big pan, cook the beef and onion till the beef is browned, breaking it up. Drain the fat, then stir in the taco seasoning and beans if using.
  3. Layer it up. Spread a little sauce in the baking dish, then layer torn tortillas, beef, sauce, and cheese. Repeat till everything is used, ending with cheese on top.
  4. Bake. Cover with foil and bake 20 minutes, then uncover and bake 10 more minutes till bubbly and golden.
  5. Rest and serve. Let it sit 5 minutes, then scoop out servings with sour cream if you like.
