Take the eggs off the heat while they still look a little shiny so they stay soft.
How to make them
- Cook the sausage. Brown it in a big pan over medium-high heat, breaking it into crumbles, about 5–6 minutes. Scoop it out onto a plate.
- Whisk the eggs. Mix the eggs, milk and a pinch of salt and pepper in a bowl.
- Start the eggs. Melt the butter in the same pan over medium-low heat. Pour in the eggs.
- Scramble them gently. Stir slowly with a spatula, pushing the eggs around until just set and still a little shiny, about 3–4 minutes. Take them off the heat — they'll keep cooking.
- Warm the tortillas. Heat them in a dry pan or straight over a gas flame for a few seconds per side.
- Build the tacos. Fill each tortilla with eggs, sausage and cheddar. Top with salsa and sour cream.
