Chicken caesar wraps cut in half showing grilled chicken, romaine and parmesan in toasted tortillas

Warm the tortillas first so they roll up without cracking.

How to make it

  1. Season the chicken.. Rub the chicken breasts all over with the olive oil, garlic powder, salt and pepper. Make sure both sides are coated.
  2. Cook the chicken.. Heat your grill pan or skillet over medium-high heat. Cook the chicken 5–6 minutes per side, until the middle is no longer pink. Let it rest 5 minutes so the juices stay in, then slice it into strips.
  3. Warm the tortillas.. Heat each tortilla in a dry skillet for about 30 seconds per side. Warm tortillas roll up easy; cold ones crack.
  4. Toss the salad part.. In a big bowl, toss the chopped romaine with the ½ cup of Caesar dressing and half of the parmesan until everything is lightly coated.
  5. Build the wraps.. Lay a tortilla flat. Pile on a quarter of the dressed romaine, a quarter of the chicken strips, some croutons if you are using them, and a sprinkle of the rest of the parmesan. Drizzle a little extra dressing over the top.
  6. Roll them up.. Fold in the two sides, then roll from the bottom up, tucking as you go so it is nice and tight. Cut in half on a slant and serve right away.

How to serve it

Great with chips or a pickle spear on the side. Extra Caesar dressing for dipping never hurts.

Save the leftovers

Best eaten fresh, but you can keep the parts separate in the fridge for up to 2 days and roll fresh wraps when you want one.
