Toast the bread in the bacon grease for the best BLT of your life.

How to make it

  1. Cook the bacon crisp.. Lay the bacon in the cold skillet in a single layer. Turn the heat to medium and cook 4–5 minutes per side until crispy. Move to a paper-towel-lined plate.
  2. Toast the bread.. Pour out most of the bacon grease, leaving a thin coating. Toast the bread in the skillet 1–2 minutes per side until golden.
  3. Spread the mayo.. Spread a spoonful of mayo on one side of every slice of bread.
  4. Layer it up.. On 4 slices, stack 2 lettuce leaves, 3 slices of bacon and 2–3 tomato slices. Sprinkle the tomatoes with salt and pepper.
  5. Close and cut.. Top with the other bread slices, press down gently and cut each sandwich in half.

How to serve it

Potato chips and a pickle spear on the side — the classic diner plate.

Save the leftovers

Best eaten fresh. If you must save one, wrap it tight and refrigerate — eat within a day, the lettuce wilts fast.
