Let the roast rest 15 minutes before slicing so the juices stay in the meat.
How to make it
- Season the roast. Pat the roast dry with paper towels — this helps the outside brown. Rub it all over with the oil, then sprinkle on the salt, pepper, garlic powder, onion powder, paprika and rosemary. Rub it in with your hands.
- Load up the Crock-Pot. Put the roast in the middle of the Crock-Pot. Scatter the potatoes, carrots and onion chunks around it. Pour the chicken broth into the bottom.
- Cook low and slow. Put the lid on and cook on LOW for 7–8 hours (or HIGH for 4–5 hours), until the veggies are tender and the pork is very tender and reads at least 145°F on a food thermometer stuck in the thickest part.
- Rest, then slice. Move the roast to a cutting board and let it rest 15 minutes — this keeps it juicy. Slice it up and serve with the veggies and some of the juices from the pot spooned over the top.
How to serve it
Spoon the juices from the pot over everything. Applesauce on the side is classic with pork.
Save the leftovers
Refrigerate for up to 4 days. Leftover pork makes great sandwiches or quesadillas.
