Don't open the waffle maker early — let them get deep golden before peeking.

How to make it

  1. Heat up the waffle maker.. Plug it in and let it get fully hot while you mix the batter. A hot iron is what makes them crispy.
  2. Mix the dry ingredients.. Whisk the flour, sugar, baking powder and salt together in a large bowl.
  3. Mix the wet ingredients.. In a second bowl, whisk the eggs, milk, melted butter and vanilla until smooth.
  4. Combine the two.. Pour the wet mixture into the dry and stir just until mixed. A few small lumps are fine — don't overmix or the waffles get tough.
  5. Cook the waffles.. Ladle batter onto the hot waffle maker (don't overfill — it puffs up). Close the lid and cook 4–5 minutes until deep golden and crispy.
  6. Serve them hot.. Keep finished waffles warm in a 200°F oven while you cook the rest. Serve with butter and warm maple syrup.

How to serve it

Butter and warm maple syrup are the classic. Fresh berries and whipped cream make them extra special.

Save the leftovers

Refrigerate for up to 3 days. Reheat in the toaster to bring back the crispiness.
