A tall stack of golden buttermilk pancakes with butter and maple syrup

Let the batter rest for five minutes so the pancakes puff up tall and fluffy.

How to make them

  1. Mix the dry ingredients. In a big bowl, whisk the flour, sugar, baking powder, baking soda and salt.
  2. Mix the wet ingredients. In another bowl, whisk the buttermilk, eggs and melted butter.
  3. Make the batter. Pour the wet into the dry and stir just until combined — lumps are fine, don't overmix.
  4. Let the batter rest for 5 minutes. It'll get puffy. That's the fluff happening.
  5. Heat the pan. Put a griddle or big pan over medium heat and melt a little butter.
  6. Cook the first side. Scoop ¼ cup batter per pancake. Cook until bubbles pop on top and the edges look set, about 2–3 minutes.
  7. Flip and finish. Cook for 1–2 more minutes until golden.
  8. Serve hot with butter and syrup.
