Toss the fries with the garlic butter while they are still hot so everything sticks.
How to make it
- Heat the oven to 425°F.. Line your baking sheet with parchment paper so the fries do not stick.
- Season the fries.. Dump the frozen fries into the big bowl. Drizzle with the olive oil, sprinkle on the salt and pepper, and toss until every fry is coated.
- Bake until crispy.. Spread the fries out in one layer on the baking sheet. Crowded fries steam instead of crisp, so use two sheets if you need to. Bake 25–30 minutes, flipping them once halfway through, until deep golden and crispy.
- Make the garlic butter.. While the fries bake, melt the butter in the small saucepan over low heat. Stir in the minced garlic and cook 1–2 minutes until it smells amazing. Do not let it brown.
- Toss it all together.. Put the hot fries back in the big bowl. Pour the garlic butter over them and toss well. Sprinkle on the parmesan and parsley and toss again.
- Serve right away.. Pile them into a basket or bowl and serve hot with mayo or aioli for dipping.
How to serve it
Best eaten hot and fresh. A squeeze of lemon on top is really good too.
Save the leftovers
Refrigerate for up to 2 days. Reheat in a 425°F oven for 8–10 minutes to crisp them back up. The microwave makes them soggy.
