Glass jar of overnight oats layered with peanut butter and sliced bananas, drizzled with honey

Make them before bed and wake up to breakfast already done.

How to make it

  1. Mash the banana.. Put half the banana slices in a bowl and mash them with a fork. Save the rest for topping in the morning.
  2. Mix everything.. Stir in the oats, milk, peanut butter, honey, vanilla, chia seeds if using, and the pinch of salt. Keep stirring until the peanut butter is fully mixed in.
  3. Divide into jars.. Spoon the mixture into two jars or bowls and put the lids on.
  4. Refrigerate overnight.. Let them sit in the fridge at least 6 hours, or overnight. The oats soak up the milk and turn thick and creamy.
  5. Top and eat.. In the morning, give each jar a good stir, top with the saved banana slices and a drizzle of honey. Eat cold, straight from the jar.

How to serve it

Extra banana slices, a drizzle of honey, or a spoonful of peanut butter on top.

Save the leftovers

Keep refrigerated and eat within 3 days. These are meant to be eaten cold.
