A plate of golden peanut butter oatmeal cookies with fork criss-cross marks on top

Press the fork criss-cross before baking — these cookies keep the shape you give them.

How to make it

  1. Heat the oven. Set it to 350 degrees.
  2. Mix the butter and sugars. In a big bowl, mix the soft butter, peanut butter, sugar, and brown sugar till smooth.
  3. Add the egg and vanilla. Mix them in till it all looks even.
  4. Stir in the dry stuff. Add the flour, baking soda, and salt and stir till you can't see any white flour.
  5. Add the oats last. Stir in the oats. The dough will be thick — that's right.
  6. Make the balls. Scoop spoonfuls of dough and squeeze and press each one in your fist till it holds together, then set them on the cookie sheet with space between them.
  7. Do the criss-cross. Press each ball down a little with a fork, one way, then the other way.
  8. Bake. Bake 10 to 12 minutes, till the edges look light golden. The middles will look a little soft — that's right.
  9. Cool. Leave the cookies on the hot pan for 5 minutes, then move them to a plate to finish cooling.
