Stir the popcorn while the caramel's hot — once it cools, it won't budge.
How to make it
- Heat the oven. Set it to 250°F. Put the popcorn in your biggest bowl and line a baking sheet with parchment.
- Make the caramel. Melt the butter in a saucepan, stir in the brown sugar and corn syrup, and boil 4 minutes without stirring. Take it off the heat and stir in the baking soda and vanilla — it'll foam up.
- Coat the popcorn. Pour the caramel over the popcorn and stir fast until every piece is coated.
- Bake it crisp. Spread on the baking sheet and bake 45 minutes, stirring every 15. (Yes, really — that's what makes it crunchy.)
- Finish it. Let it cool, toss with candy corn, and drizzle with melted chocolate.
